Production
To prepare the Seitan you must firstly obtain gluten, in the form of flour, the you have to proceed as follows:
- Put the flour in a bowl, and add water quantity twice the weight of flour you used.
- Prepare a pot with at least 3 liters of water and bring to boil.
- Mix vigorously with your hands, until you obtain a compound homogenous and elastic.
- At this point, remove the excess water, mix again for about a minute and then let the dough rest from 10 to 20 minutes.
- Add 4-5 tablespoons soy sauce with about a tablespoon of salt to water in the pot.
- Model Seitan until you reach a tapered shape, then put it in the pot for about three-quarters of an hour, taking care to turn it after about half an hour.
- The preparation is ended. Extract the Seitan and let cool, then you can use it in place of meat in many recipes.
